For the Chicken:

  • 2 large boneless and skinless chicken breasts, sliced horizontally to make 4 fillets

  • 1 tablespoon fresh oregano or parsley leaves to garnish (optional)

For the Garlic Mayonnaise:

  • ¼ cup mayonnaise

  • 2 minced garlic cloves

  • ½ teaspoon onion powder

  • 1 teaspoon Italian seasoning

  • ½ teaspoon garlic powder (optional)

  • Salt to taste

For the Parmesan Coating:

  • 1 cup fresh grated parmesan cheese

  • ½ cup panko breadcrumbs


Instructions

  • Prepare the Garlic Mayo Sauce:

    • In a small bowl, combine the mayonnaise, minced garlic, onion powder, Italian seasoning, garlic powder (optional), and salt.

    • Stir until everything is well combined and set aside to let the flavors meld.

  • Prepare the Parmesan Coating:

    • In another shallow bowl, combine the fresh grated parmesan cheese and panko breadcrumbs.

    • Stir until evenly mixed.

  • Prepare the Chicken:

    • Slice the chicken breasts horizontally into 4 fillets (2 fillets per chicken breast).

    • Pat the chicken fillets dry with paper towels.

    • Dip each chicken fillet into the garlic mayo mixture, coating both sides evenly.

    • Immediately coat the mayo-covered chicken fillets in the parmesan breadcrumb mixture, pressing gently to ensure the coating sticks well.

  • Cook in the Air Fryer:

    • Preheat the air fryer to 375°F (190°C).

    • Place the coated chicken fillets in the air fryer basket in a single layer (do not overcrowd, cook in batches if necessary).

    • Air fry the chicken for 12-15 minutes, flipping halfway through, or until the chicken is golden and crispy on the outside, and the internal temperature reaches 165°F (74°C).

 

  • Serve:

    • Once cooked, remove the chicken from the air fryer.

    • Garnish with fresh oregano or parsley leaves (optional).

    • Serve the chicken with a side of your choice, such as a salad or roasted vegetables, and drizzle with the remaining garlic mayo sauce.

Notes

  • For an extra crunchy coating, you can double-coat the chicken by dipping it again in the mayo and then the parmesan mixture.

  • If you don’t have fresh parmesan, pre-grated parmesan can be used, but fresh cheese will give you the best flavor and texture.
