Ingredients

3 cups cooked chicken, diced or shredded

½ cup butter, room temperature and cubed

8 ounces cream cheese, room temperature and cubed

10.5 ounces cream of chicken soup

3 cloves garlic, minced

0.7 ounce Italian dressing mix (I used Good Seasons)

1 cup chicken stock

2 cups shredded Colby Jack cheese, divided use

Salt and pepper to taste

Fresh parsley for garnish
Instructions

In a large bowl, combine the cooked chicken and rice.

In a separate saucepan, melt butter over medium heat.

Add cream cheese, cream of chicken soup, and garlic to the pan. Stir until the cream cheese and soup are fully combined and smooth.

Stir in the Italian dressing mix and chicken stock, continuing to cook until the mixture is heated through.

Pour the sauce over the chicken and rice mixture, stirring until everything is well combined.

Add 1 ½ cups of shredded Colby Jack cheese and stir until melted and incorporated.

Season with salt and pepper to taste.

Transfer the mixture to a greased baking dish and sprinkle the remaining ½ cup of shredded cheese on top.

Bake at 350°F for 20–25 minutes, or until bubbly and golden.
