Description

Apple Pie Biscuits are flaky and delicious, filled with spiced apple filling and topped with a sweet glaze. Perfect for breakfast or as a sweet treat!

For the Biscuits:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour

For the Glaze:

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla extract

Instructions

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Stir in the milk and vanilla extract until just combined. Do not overmix.
  • On a lightly floured surface, roll out the dough to about 1/2-inch thickness.
  • For the apple filling, combine the diced apples, sugar, cinnamon, and flour in a bowl.
  • Cut the dough into 3-inch squares. Place a spoonful of apple filling in the center of each square. Fold the corners up and press to seal.
  • Place the biscuits on the prepared baking sheet. Bake for 12-15 minutes, or until the biscuits are golden brown.
  • For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm biscuits.
  • Serve warm and enjoy!

Notes

These apple pie biscuits are great for breakfast or as a sweet treat. You can also add a sprinkle of extra cinnamon sugar on top before baking for added flavor!
