For the Biscuits:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 3/4 cup milk
- 1 teaspoon vanilla extract
For the Apple Filling:
- 2 medium apples, peeled, cored, and diced
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon all-purpose flour
For the Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until just combined. Do not overmix.
- On a lightly floured surface, roll out the dough to about 1/2-inch thickness.
- For the apple filling, combine the diced apples, sugar, cinnamon, and flour in a bowl.
- Cut the dough into 3-inch squares. Place a spoonful of apple filling in the center of each square. Fold the corners up and press to seal.
- Place the biscuits on the prepared baking sheet. Bake for 12-15 minutes, or until the biscuits are golden brown.
- For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm biscuits.
- Serve warm and enjoy!
Notes
These apple pie biscuits are great for breakfast or as a sweet treat. You can also add a sprinkle of extra cinnamon sugar on top before baking for added flavor!
