Description

For the Apple Filling:

  • 4 cups peeled and sliced apples
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1/4 cup water

For the Enchiladas:

  • 8 small flour tortillas
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Sauce:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup water

For Serving:

  • Vanilla ice cream (optional)
  • Whipped cream (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • For the apple filling, in a large saucepan, combine sliced apples, granulated sugar, lemon juice, cinnamon, nutmeg, cornstarch, and water. Cook over medium heat, stirring occasionally, until the apples are tender and the mixture thickens. Remove from heat.
  • For the enchiladas, brush each tortilla with melted butter, then sprinkle with granulated sugar and ground cinnamon. Spoon a portion of the apple filling onto the center of each tortilla. Roll up the tortillas and place them seam-side down in the prepared baking dish.
  • For the sauce, in a small saucepan, melt butter over medium heat. Stir in brown sugar, granulated sugar, cinnamon, nutmeg, and water. Bring to a boil, then reduce heat and simmer for 2-3 minutes. Pour the sauce evenly over the enchiladas.
  • Bake for 25-30 minutes, or until the enchiladas are golden brown and bubbly.
  • Serve warm with vanilla ice cream and whipped cream, if desired.
