For the Fritters:
- 2 cups all-purpose flour

- 2 large eggs
- 1/4 cup melted unsalted butter
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and diced
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, mix the milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples until evenly distributed throughout the batter.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean. Allow the fritters to cool slightly on a wire rack.
- For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm fritters.
- Serve warm and enjoy!
