This hearty Baked Denver Omelet is packed with diced ham, bell peppers, onions, and melted cheddar cheese. A perfect breakfast or brunch dish, it’s easy to prepare and bakes up fluffy and flavorful with minimal effort.


Ingredients

  • 2 tablespoons butter
  • ½ small onion, diced
  • ½ small green bell pepper, diced
  • ½ small red bell pepper, diced
  • 1 cup diced cooked ham
  • 8 large eggs
  • ¼ cup half-and-half (or whole milk)
  • ¾ cup shredded cheddar cheese
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon coarse salt
  • ¼ teaspoon pepper

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×9-inch or similar size baking dish.
  • In a large skillet, melt the butter over medium heat. Add the diced onion and bell peppers and sauté for 3-4 minutes until softened.
  • Stir in the diced ham and cook for another 2-3 minutes. Remove the skillet from heat and set aside.
  • In a medium bowl, whisk together the eggs, half-and-half (or milk), onion powder, garlic powder, salt, and pepper until fully combined.
  • Add the cooked vegetable and ham mixture into the egg mixture, stirring to combine.
  • Pour the egg mixture into the prepared baking dish and sprinkle the shredded cheddar cheese evenly on top.
  • Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is golden brown.
  • Allow the omelet to cool for a few minutes before slicing and serving.

Notes

  • You can substitute the ham with cooked bacon or sausage if preferred.
  • For a dairy-free version, use a dairy-free cheese and milk alternative.
