This hearty Baked Denver Omelet is packed with diced ham, bell peppers, onions, and melted cheddar cheese. A perfect breakfast or brunch dish, it’s easy to prepare and bakes up fluffy and flavorful with minimal effort.

- 2 tablespoons butter
- ½ small onion, diced
- ½ small green bell pepper, diced
- ½ small red bell pepper, diced
- 1 cup diced cooked ham
- 8 large eggs
- ¼ cup half-and-half (or whole milk)
- ¾ cup shredded cheddar cheese
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon coarse salt
- ¼ teaspoon pepper
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×9-inch or similar size baking dish.
- In a large skillet, melt the butter over medium heat. Add the diced onion and bell peppers and sauté for 3-4 minutes until softened.
- Stir in the diced ham and cook for another 2-3 minutes. Remove the skillet from heat and set aside.
- In a medium bowl, whisk together the eggs, half-and-half (or milk), onion powder, garlic powder, salt, and pepper until fully combined.
- Add the cooked vegetable and ham mixture into the egg mixture, stirring to combine.
- Pour the egg mixture into the prepared baking dish and sprinkle the shredded cheddar cheese evenly on top.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is golden brown.
- Allow the omelet to cool for a few minutes before slicing and serving.
Notes
- You can substitute the ham with cooked bacon or sausage if preferred.
