Ingredients

  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes
  • 12 oz pasta (penne or rigatoni works best)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh basil leaves for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • In a baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes.
  • Drizzle with olive oil, then sprinkle with minced garlic, oregano, basil, salt, and pepper.
  • Bake for 25-30 minutes, or until the feta is soft and tomatoes are blistered.
  • Meanwhile, cook pasta according to package instructions. Drain and set aside.
  • Remove the baking dish from the oven and use a fork to mash the feta cheese and tomatoes together to create a creamy sauce.
  • Toss the cooked pasta with the feta-tomato mixture until well combined.
  • Garnish with fresh basil leaves before serving.
