Description

This hearty Baked Potato Chicken and Broccoli Casserole is a comforting, all-in-one meal featuring tender chicken, potatoes, and broccoli in a creamy, cheesy sauce. Perfect for busy weeknights!


Ingredients

  • 2 cups cooked chicken, diced
  • 4 cups potatoes, peeled and diced
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup milk
  • 1 (10.5 oz) can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ cup breadcrumbs (optional)

Instructions

  • Preheat Oven:
    Preheat your oven to 375°F (190°C).
  • Prepare Potatoes:
    Boil diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
  • Cook Broccoli:
    Steam or blanch broccoli florets until tender, about 5 minutes. Drain and set aside.
  • Mix Ingredients:
    In a large bowl, combine cooked chicken, boiled potatoes, steamed broccoli, shredded cheddar cheese, sour cream, milk, cream of chicken soup, garlic powder, onion powder, paprika, salt, and pepper. Stir until well mixed.
  • Transfer to Casserole Dish:
    Transfer the mixture to a greased 9×13-inch baking dish. If using, sprinkle breadcrumbs over the top for extra crunch.
  • Bake:
    Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  • Serve:
    Allow the casserole to cool slightly before serving.

Notes

For extra flavor, consider adding cooked bacon or other vegetables such as bell peppers or carrots.
