Ingredients
Scale
For the Dough:
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/4 cup warm milk (110°F/45°C)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1 large egg
- 1/2 cup mashed ripe bananas (about 1 medium banana)
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
For the Cinnamon Filling:
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 1/4 cup unsalted butter, softened
For the Cream Cheese Glaze:
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a small bowl, dissolve the yeast in warm milk. Let it sit for about 5 minutes, until frothy.
- In a large mixing bowl, combine the sugar, melted butter, vanilla extract, and egg. Add the mashed bananas and mix well.
- Add the yeast mixture to the banana mixture and stir to combine. Gradually add the flour and salt, mixing until a soft dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour, or until doubled in size.
- For the filling, mix the brown sugar and cinnamon in a bowl. Roll the dough out into a 12×16-inch rectangle on a floured surface. Spread the softened butter over the dough, then sprinkle evenly with the cinnamon-sugar mixture.
- Roll the dough up tightly from the long side, then cut into 12 rolls. Place the rolls in a greased 9×13-inch baking dish. Cover and let rise for an additional 30 minutes.
- Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, until golden brown.
- For the glaze, beat the cream cheese, powdered sugar, milk, and vanilla extract together until smooth. Drizzle over the warm rolls.
Notes
For a touch of extra sweetness, you can add chopped nuts or raisins to the cinnamon filling. These rolls are perfect for breakfast or as a sweet treat with coffee!
