  • 2 large eggs
  • 4 cups all-purpose flour, plus extra for dusting

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 2 teaspoons ground cinnamon

For the Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  • Prepare the Dough:
    • In a large mixing bowl, combine the warm milk and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.
    • Add the mashed bananas, granulated sugar, melted butter, and eggs to the yeast mixture. Mix until well combined.
    • Gradually add the flour and salt, mixing until a soft dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
    • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
  • Make the Filling:
    • In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined.
  • Assemble the Rolls:
    • Once the dough has risen, punch it down and roll it out on a lightly floured surface into a large rectangle, about 1/4 inch thick.
    • Spread the cinnamon-sugar filling evenly over the dough.
    • Starting from one of the long sides, tightly roll up the dough into a log. Cut the log into 12 equal slices.
    • Place the rolls in a greased 9×13-inch baking dish. Cover with a kitchen towel and let them rise again for about 30 minutes.
  • Bake the Rolls:
    • Preheat your oven to 350°F (175°C).
    • Once the rolls have risen, bake them for 25-30 minutes, or until golden brown.
  • Prepare the Cream Cheese Icing:
    • In a medium bowl, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  • Frost the Rolls:
    • Once the cinnamon rolls are baked and slightly cooled, spread the cream cheese icing over the top. Serve warm.
