2 lbs boneless, skinless chicken breasts
-
1 cup buttermilk
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon paprika
-
1/2 teaspoon salt
-
1/2 teaspoon black pepper
-
1 cup all-purpose flour
-
1 cup panko breadcrumbs
-
Vegetable oil (for frying)
For the Bang Bang Sauce:
-
1/2 cup mayonnaise
-
1/4 cup sweet chili sauce
-
2 tablespoons sriracha sauce (adjust to taste)
-
1 tablespoon honey
-
1 tablespoon lime juice
-
1 teaspoon garlic powder
For the Sliders:
-
12 mini slider buns
-
1 cup shredded lettuce
-
1/2 cup thinly sliced red onion
-
1/2 cup pickles (optional)
-
Fresh cilantro (for garnish, optional)
Instructions
-
Prepare the Chicken:
-
Slice the chicken breasts into small, slider-sized pieces (about 2-3 pieces per breast).
-
In a bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken pieces to the bowl, coating them evenly, and refrigerate for at least 30 minutes to marinate.
-
-
Bread the Chicken:
-
In a shallow dish, combine the all-purpose flour and panko breadcrumbs.
-
After marinating the chicken, dredge each piece first in the flour and panko mixture, pressing gently to ensure an even coat.
-
-
Fry the Chicken:
-
Heat vegetable oil in a large skillet or deep fryer over medium-high heat.
-
Once the oil is hot (around 350°F or 175°C), fry the breaded chicken pieces in batches for about 4-5 minutes per side, or until golden brown and crispy. Remove the chicken from the oil and drain on paper towels.
-
-
Make the Bang Bang Sauce:
-
In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha sauce, honey, lime juice, and garlic powder until smooth. Adjust the amount of sriracha to taste for more or less heat.
-
-
Assemble the Sliders:
-
Lightly toast the mini slider buns in a pan or oven until golden.
-
Spread a generous amount of Bang Bang sauce on the bottom bun of each slider.
-
Place a piece of fried chicken on top of the sauce.
-
Add shredded lettuce, sliced red onion, and pickles (if using) on top of the chicken.
-
Top with fresh cilantro and the top half of the slider bun.
-
-
Serve:
-
Serve the sliders immediately with extra Bang Bang sauce on the side for dipping.
-
Notes
-
For a healthier version, you can bake the chicken instead of frying it.
-
The sauce can be made in advance and stored in the fridge for up to a week.
- You can customize the toppings by adding things like sliced jalapeños or avocado for extra flavor.
