1 large head cauliflower, cut into florets

1/2 cup whole wheat or all-purpose flour

2 large eggs, lightly beaten

3 cloves garlic, minced

3 tablespoons minced scallions, plus more for garnishing

Olive oil, for frying

Yogurt or sour cream, for serving
Instructions

Bring a large pot of water to a boil. Add cauliflower florets and cook for 5–7 minutes, or until tender. Drain well and let cool slightly.

Mash the cauliflower with a fork or potato masher until crumbly but not completely smooth.

In a large bowl, combine mashed cauliflower, flour, eggs, garlic, and scallions. Mix until well combined and a batter forms.

Heat a generous amount of olive oil in a skillet over medium heat.

Scoop about 2 tablespoons of the mixture for each fritter into the pan and flatten slightly with a spatula.

Cook for 3–4 minutes per side, or until golden brown and crisp.

Transfer to a paper towel–lined plate to drain excess oil.

For a gluten-free version, use a gluten-free flour blend.

To make the fritters crispier, allow the mixture to sit for 10 minutes before frying.
