Description

Crispy on the outside, tender on the inside — these Basic Cauliflower Fritters are a delicious and healthy way to enjoy this versatile vegetable. Made with simple ingredients and pan-fried to golden perfection, they’re perfect as a snack, appetizer, or light vegetarian meal. Serve with a dollop of yogurt or sour cream for an irresistible touch.

  • 1 large head cauliflower, cut into florets

  • 1/2 cup whole wheat or all-purpose flour

  • 2 large eggs, lightly beaten

  • 3 cloves garlic, minced

  • 3 tablespoons minced scallions, plus more for garnishing

  • Olive oil, for frying

  • Yogurt or sour cream, for serving


Instructions

  • Bring a large pot of water to a boil. Add cauliflower florets and cook for 5–7 minutes, or until tender. Drain well and let cool slightly.

  • Mash the cauliflower with a fork or potato masher until crumbly but not completely smooth.

  • In a large bowl, combine mashed cauliflower, flour, eggs, garlic, and scallions. Mix until well combined and a batter forms.

  • Heat a generous amount of olive oil in a skillet over medium heat.

  • Scoop about 2 tablespoons of the mixture for each fritter into the pan and flatten slightly with a spatula.

  • Cook for 3–4 minutes per side, or until golden brown and crisp.

  • Transfer to a paper towel–lined plate to drain excess oil.

  • Serve warm, topped with additional scallions and a dollop of yogurt or sour cream.

Notes

  • For a gluten-free version, use a gluten-free flour blend.

  • To make the fritters crispier, allow the mixture to sit for 10 minutes before frying.

  • These can be baked at 400°F (200°C) for about 20–25 minutes as a lighter alternative.
