- 1 lb beef brisket, cooked and shredded
- 4 slices sourdough bread
- 4 tablespoons BBQ sauce
- 4 slices sharp cheddar cheese
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add the sliced onions, season with salt, and cook for about 10-15 minutes, stirring occasionally, until caramelized.
- Spread butter on one side of each slice of sourdough bread.
- On the unbuttered side of two slices, layer the BBQ sauce, shredded brisket, caramelized onions, and cheddar cheese.
- Place the remaining bread slices on top, buttered side facing out.
- Heat a large skillet or griddle over medium heat. Place the sandwiches on the skillet and cook for 3-4 minutes on each side until the bread is golden and the cheese is melted.
- Slice in half and serve hot.
