Ingredients

  • 1 lb beef brisket, cooked and shredded
  • 4 slices sourdough bread
  • 4 tablespoons BBQ sauce
  • 4 slices sharp cheddar cheese
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  • In a skillet, heat olive oil over medium heat. Add the sliced onions, season with salt, and cook for about 10-15 minutes, stirring occasionally, until caramelized.
  • Spread butter on one side of each slice of sourdough bread.
  • On the unbuttered side of two slices, layer the BBQ sauce, shredded brisket, caramelized onions, and cheddar cheese.
  • Place the remaining bread slices on top, buttered side facing out.
  • Heat a large skillet or griddle over medium heat. Place the sandwiches on the skillet and cook for 3-4 minutes on each side until the bread is golden and the cheese is melted.
  • Slice in half and serve hot.

Notes

  • Feel free to add jalapeños for a spicy kick!
  • Serve with a side of pickles or coleslaw for added crunch.
