- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 cup black beans, drained and rinsed
- 1/4 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- Salt and pepper, to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper, then grill for 6-7 minutes per side, or until fully cooked through.
- Brush the chicken with BBQ sauce during the last 2-3 minutes of grilling, then remove from heat and let rest for 5 minutes before slicing.
- In a large bowl, combine chopped romaine lettuce, cherry tomatoes, red onion, corn, black beans, and shredded cheddar cheese.
- Slice the grilled chicken and add it on top of the salad.
- Drizzle the salad with ranch dressing and toss everything together until well combined.
- Serve immediately and enjoy!
