Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • Salt and pepper, to taste

Instructions

  • Preheat the grill to medium-high heat.
  • Season the chicken breasts with salt and pepper, then grill for 6-7 minutes per side, or until fully cooked through.
  • Brush the chicken with BBQ sauce during the last 2-3 minutes of grilling, then remove from heat and let rest for 5 minutes before slicing.
  • In a large bowl, combine chopped romaine lettuce, cherry tomatoes, red onion, corn, black beans, and shredded cheddar cheese.
  • Slice the grilled chicken and add it on top of the salad.
  • Drizzle the salad with ranch dressing and toss everything together until well combined.
