- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup pearl barley
- 6 cups beef broth
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat over medium heat until browned on all sides.
- Add the chopped onion, sliced carrots, and chopped celery to the pot. Cook for about 5 minutes, or until the vegetables are tender.
- Stir in the pearl barley, beef broth, thyme, salt, and pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour, until the beef is tender and the barley is cooked.
- Taste and adjust seasoning as needed, then serve hot.

- For extra flavor, you can add a bay leaf or a splash of Worcestershire sauce while the soup simmers.
