Description

Ingredients

  • 1 lb beef stew meat, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup pearl barley
  • 6 cups beef broth
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  • In a large pot, brown the beef stew meat over medium heat until browned on all sides.
  • Add the chopped onion, sliced carrots, and chopped celery to the pot. Cook for about 5 minutes, or until the vegetables are tender.
  • Stir in the pearl barley, beef broth, thyme, salt, and pepper.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour, until the beef is tender and the barley is cooked.
  • Taste and adjust seasoning as needed, then serve hot.
