Description

Berry Cheesecake Bites are a refreshing and bite-sized dessert featuring a creamy cheesecake filling atop a crunchy graham cracker crust, topped with fresh mixed berries. Perfect for a light, no-bake treat that is both easy to prepare and bursting with flavor.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 1/4 cup butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream
  • 1 cup mixed berries (strawberries, blueberries, raspberries, etc.)

Instructions

  • In a bowl, combine graham cracker crumbs, 2 tbsp sugar, and melted butter. Press into the bottom of a 9×9 inch dish.
  • In a separate bowl, beat cream cheese, 1/4 cup sugar, and vanilla extract until smooth. Fold in whipped cream.
  • Spread cream cheese mixture over the graham cracker crust.
  • Top with mixed berries and refrigerate for at least 2 hours before serving.

Notes

  • You can use any mixed berries you like, or substitute with other fruits such as sliced peaches or mango.
  • For a firmer texture, you can chill the cheesecake bites overnight.
