- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup semisweet chocolate chips
- 1/4 cup unsweetened cocoa powder

- In a medium mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Stir until the mixture is smooth and well-combined.
- Roll the ricotta mixture into small balls, about 1-inch in size, and place them on a baking sheet lined with parchment paper. Freeze for 30 minutes to firm up.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until fully smooth and melted.
- Dip each ricotta ball into the melted chocolate, ensuring it is fully coated, then place them back on the baking sheet. Refrigerate the truffles for another 30 minutes to set the chocolate.
- Once the chocolate has hardened, roll the truffles in unsweetened cocoa powder for a finishing touch.
