This refreshing and flavorful salsa combines black beans, sweet corn, bell peppers, and a zesty lime dressing. Perfect for dipping with tortilla chips or as a topping for tacos or grilled meats.

- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and diced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- 2 tbsp lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, corn, red bell pepper, red onion, jalapeno, and cilantro.
- Drizzle olive oil and lime juice over the mixture and toss to combine.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve with tortilla chips or as a topping for tacos.
Notes
- You can add a little extra heat by leaving some seeds in the jalapeno or adding another spicy pepper.
- This salsa works great as a side dish for grilled meats or served on top of a salad.
