Description

This refreshing and flavorful salsa combines black beans, sweet corn, bell peppers, and a zesty lime dressing. Perfect for dipping with tortilla chips or as a topping for tacos or grilled meats.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine black beans, corn, red bell pepper, red onion, jalapeno, and cilantro.
  • Drizzle olive oil and lime juice over the mixture and toss to combine.
  • Season with salt and pepper to taste.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve with tortilla chips or as a topping for tacos.

Notes

  • You can add a little extra heat by leaving some seeds in the jalapeno or adding another spicy pepper.
  • This salsa works great as a side dish for grilled meats or served on top of a salad.
