- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons blackened seasoning
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with blackened seasoning, salt, and pepper.
- Cook chicken in the skillet for 6-7 minutes per side or until cooked through.
- Remove chicken from skillet and set aside.
- In the same skillet, add cherry tomatoes and cook for 2-3 minutes until slightly softened.
- Stir in heavy cream and Parmesan cheese until the sauce thickens.
- Return chicken to the skillet and coat with the sauce.
- Serve hot, garnished with fresh basil leaves.
