Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons blackened seasoning
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken breasts with blackened seasoning, salt, and pepper.
  • Cook chicken in the skillet for 6-7 minutes per side or until cooked through.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add cherry tomatoes and cook for 2-3 minutes until slightly softened.
  • Stir in heavy cream and Parmesan cheese until the sauce thickens.
  • Return chicken to the skillet and coat with the sauce.
  • Serve hot, garnished with fresh basil leaves.
