- 4 skinless salmon filets
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper (optional)
- 2 tbsp olive oil (plus extra for cooking)
- 1 cup fresh spinach, chopped
- 1/4 cup grated Parmesan cheese
- 2 tbsp cream cheese, softened
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C). In a small bowl, mix together paprika, garlic powder, onion powder, black pepper, cayenne (if using), and salt.
- In a skillet, sauté the chopped spinach in olive oil until wilted. Mix in the grated Parmesan and cream cheese until well combined. Set aside.
- Make a small slit in the center of each salmon filet to create a pocket. Stuff each filet with the spinach mixture.
- Rub the blackened seasoning mixture on both sides of the salmon filets.
- Heat olive oil in a skillet over medium-high heat. Sear the salmon filets for 2-3 minutes on each side, then transfer them to the oven and bake for 10-12 minutes, until cooked through.
- Serve with lemon wedges or a fresh salad on the side.
Notes
Adjust the level of cayenne pepper to suit your spice preference. Fresh lemon juice can enhance the flavors when serving.
