Description

Crispy, buttery baby potatoes smashed and seared to perfection on the Blackstone griddle, loaded with melted cheddar, crispy bacon, and your favorite toppings. This irresistible side dish is a guaranteed crowd-pleaser for any meal or gathering.


Ingredients

  • 2 pounds baby potatoes

  • 2 tablespoons butter

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon sea salt

  • 1 cup shredded cheddar cheese

  • ½ cup bacon bits

Optional Toppings:

  • Sour cream

  • Chopped fresh parsley or chives for garnish


Instructions

  • Boil baby potatoes in salted water until fork-tender, about 15–20 minutes. Drain and let cool slightly.

  • Preheat your Blackstone griddle to medium-high heat.

  • Toss the potatoes in olive oil, garlic powder, and sea salt.

  • Melt butter directly on the griddle. Place potatoes on the griddle and gently smash each one with a spatula or burger press.

  • Cook for 5–7 minutes until crispy on the bottom. Flip and top with cheddar cheese and bacon bits.

  • Continue cooking for 5 more minutes or until cheese is melted and potatoes are golden and crisp.

  • Remove from heat and garnish with sour cream and herbs if desired. Serve immediately.

Notes

  • For extra crispy edges, allow the potatoes to sit undisturbed while cooking.

  • You can use pre-cooked bacon bits or cook fresh bacon and crumble it.
