2 pounds baby potatoes

2 tablespoons butter

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon sea salt

1 cup shredded cheddar cheese

½ cup bacon bits

Instructions

Boil baby potatoes in salted water until fork-tender, about 15–20 minutes. Drain and let cool slightly.

Preheat your Blackstone griddle to medium-high heat.

Toss the potatoes in olive oil, garlic powder, and sea salt.

Melt butter directly on the griddle. Place potatoes on the griddle and gently smash each one with a spatula or burger press.

Cook for 5–7 minutes until crispy on the bottom. Flip and top with cheddar cheese and bacon bits.

Continue cooking for 5 more minutes or until cheese is melted and potatoes are golden and crisp.
- Remove from heat and garnish with sour cream and herbs if desired. Serve immediately.
