  • 1/4 cup granulated sugar
  • 1 teaspoon lemon juice
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 10 egg roll wrappers
  • Vegetable oil, for frying
  • Powdered sugar, for dusting (optional)

Instructions

  • Prepare Blueberry Filling: In a small saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until blueberries break down and the mixture thickens, about 5-7 minutes. Let cool.
  • Make Cream Cheese Mixture: In a medium bowl, mix the softened cream cheese with powdered sugar and vanilla extract until smooth.
  • Assemble Egg Rolls: Lay an egg roll wrapper on a flat surface with one corner facing you. Spread 1-2 tablespoons of the cream cheese mixture in the center of the wrapper. Top with 1 tablespoon of the blueberry filling. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edges with a little water.
  • Fry Egg Rolls: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the egg rolls in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
