Description

This Blueberry Fluffy Cottage Cheese Cloud Bread is a light, airy, and protein-rich twist on the viral cloud bread trend. Made with whipped egg whites, smooth cottage cheese, and fresh blueberries, it’s naturally low-carb and makes for a fun, guilt-free snack or breakfast treat.

  • 3 large eggs, separated

  • ½ cup full-fat cottage cheese, drained and blended until smooth

  • 1 tablespoon cornstarch

  • ¼ teaspoon cream of tartar

  • 1 tablespoon powdered sweetener (optional)

  • ½ teaspoon vanilla extract (optional)

  • ½ teaspoon lemon zest (optional)

  • ½ cup fresh blueberries


Instructions

  • Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

  • In a clean, dry bowl, beat egg whites with cream of tartar until stiff peaks form. Set aside.

  • In another bowl, mix the egg yolks with blended cottage cheese, cornstarch, sweetener, vanilla extract, and lemon zest until smooth.

  • Gently fold the egg whites into the yolk mixture in batches, being careful not to deflate the mixture.

  • Fold in the fresh blueberries gently.

  • Spoon the mixture onto the prepared baking sheet in mounds or one large round.

  • Bake for 25–30 minutes, or until golden and set.

  • Let cool slightly before serving. Best enjoyed fresh.

Notes

  • Make sure to drain and blend the cottage cheese until smooth for the best texture.

  • For a stronger blueberry flavor, mash a few berries into the batter.
