For the crust and crumble:

  • 1 ½ cups gluten-free oat flour (or all-purpose flour)

  • 1 cup old-fashioned rolled oats (gluten-free if needed)

  • ½ cup packed brown sugar (or coconut sugar)

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

  • 8 tablespoons butter or vegan buttery stick, melted

  • 1 teaspoon vanilla extract

  • ¼ teaspoon almond extract

For the filling:

  • 2 ½ heaping cups fresh or frozen blueberries

  • 3 tablespoons pure maple syrup

  • 1 tablespoon cornstarch or arrowroot starch

  • ⅛ teaspoon almond extract

  • Zest from 1 lemon (optional, for brightness)

  • Pinch of salt


Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  • In a medium bowl, mix together oat flour, oats, brown sugar, cinnamon, baking soda, and salt.

  • Add melted butter, vanilla, and almond extract. Stir until the mixture forms a crumbly texture.

  • Reserve ¾ cup of the mixture for topping. Press the remaining mixture into the bottom of the prepared pan to form an even crust.

  • In another bowl, toss the blueberries with maple syrup, cornstarch, almond extract, lemon zest (if using), and a pinch of salt.

  • Spread the blueberry filling evenly over the crust.

  • Sprinkle the reserved crumble mixture on top of the berries.

  • Bake for 35–40 minutes or until the top is golden and the filling is bubbly.

  • Cool completely before slicing into bars. Chill for cleaner cuts if desired.

Notes

  • Store in the fridge for up to 5 days or freeze for longer storage.

  • You can use frozen blueberries—no need to thaw.

  • Coconut sugar works but may alter the texture slightly.

  • Make it fully vegan by using plant-based butter.
