These blueberry oatmeal crumble bars are the perfect balance of sweet, tart, and buttery goodness. Made with wholesome oats and a juicy blueberry filling, they’re gluten-free friendly and can be made vegan. Ingredients
For the crust and crumble:

1 ½ cups gluten-free oat flour (or all-purpose flour)

1 cup old-fashioned rolled oats (gluten-free if needed)

½ cup packed brown sugar (or coconut sugar)

½ teaspoon ground cinnamon

¼ teaspoon baking soda

¼ teaspoon salt

8 tablespoons butter or vegan buttery stick, melted

1 teaspoon vanilla extract

¼ teaspoon almond extract
For the filling:

2 ½ heaping cups fresh or frozen blueberries

3 tablespoons pure maple syrup

1 tablespoon cornstarch or arrowroot starch

⅛ teaspoon almond extract

Zest from 1 lemon (optional, for brightness)

Instructions

Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

In a medium bowl, mix together oat flour, oats, brown sugar, cinnamon, baking soda, and salt.

Add melted butter, vanilla, and almond extract. Stir until the mixture forms a crumbly texture.

Reserve ¾ cup of the mixture for topping. Press the remaining mixture into the bottom of the prepared pan to form an even crust.

In another bowl, toss the blueberries with maple syrup, cornstarch, almond extract, lemon zest (if using), and a pinch of salt.

Spread the blueberry filling evenly over the crust.

Sprinkle the reserved crumble mixture on top of the berries.

Bake for 35–40 minutes or until the top is golden and the filling is bubbly.
