Description

Boursin Stuffed Chicken Breast is an elegant yet simple recipe combining tender boneless, skinless chicken breasts stuffed with creamy, herb-infused Boursin cheese and sautéed spinach. This flavorful, protein-packed dish comes together in under 30 minutes, making it perfect for weeknight dinners or special occasions. The seared chicken with its melty cheese filling is both family-friendly and versatile, ready to impress with minimal effort.

Ingredients

Scale

Main Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 oz Boursin cheese (herb-infused)
  • 1 cup fresh spinach, sautéed and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Prepare the chicken breasts: Carefully slice a pocket into each chicken breast, making sure not to cut all the way through to create a pouch for the filling.
  2. Create the filling: In a bowl, combine the Boursin cheese, sautéed spinach, minced garlic, and lemon zest if using. Mix thoroughly to evenly distribute all flavors.
  3. Stuff the chicken breasts: Using a spoon, fill each chicken breast pocket generously with the cheese and spinach mixture. Press the edges gently to seal the filling inside.
  4. Season and sear: Lightly season the outside of each stuffed chicken breast with salt and pepper. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 4-5 minutes per side until golden brown.
  5. Finish cooking in the oven: Transfer the skillet to a preheated oven at 375°F (190°C). Bake the stuffed chicken breasts for 15-20 minutes or until fully cooked and the cheese filling is warm and melty.

Notes

  • Use a sharp knife to create neat chicken pockets without cutting through.
  • Do not overfill the pockets to prevent filling from spilling during cooking.
  • Let the chicken rest for 5 minutes after cooking to retain juices and enhance flavor.
  • Pre-sauté spinach to remove excess moisture and avoid watery filling.
  • Fresh herbs like parsley or chives can be added to the filling for an extra flavor boost.
