Wholesome and fiber-packed bran muffins that provide a balanced energy boost and satisfying texture. Perfect for a nutritious breakfast, these easy-to-make muffins combine bran cereal, whole wheat flour, and natural sweeteners, with optional fruits or nuts for customizable flavor. Enjoy fresh from the oven or paired with your morning coffee for a heart-healthy start to your day.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups bran flakes or bran cereal
  • 1 cup whole wheat flour (or gluten-free blend for gluten-free option)
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 2 large eggs (or 2 flax eggs for vegan)
  • 1 cup milk or buttermilk (or plant-based milk for vegan)
  • 1/3 cup honey or brown sugar
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Optional Add-ins

  • 1/2 cup raisins, chopped nuts (walnuts, pecans, almonds), or dried/fresh fruit such as blueberries, cranberries, or chopped apples
  • 1/2 teaspoon cinnamon, nutmeg, or ground ginger (for spice variation)

Instructions

  1. Prepare Dry Ingredients: In a large bowl, combine the bran flakes, whole wheat flour, baking soda, baking powder, and salt. Stir well to evenly distribute all the dry components.
  2. Mix Wet Ingredients: In a separate bowl, whisk together eggs, milk or buttermilk, honey or brown sugar, vegetable oil or melted butter, and vanilla extract until smooth and well blended.
  3. Combine Wet and Dry Mixtures: Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined—avoid overmixing to keep the muffins tender and light.
  4. Add Optional Mix-ins: Fold in raisins, nuts, or any desired extras carefully to distribute them without overworking the batter.
  5. Bake to Perfection: Divide the batter evenly into a greased or lined muffin tin. Bake in a preheated oven at 375°F (190°C) for 18 to 22 minutes, or until a toothpick inserted comes out clean. Allow muffins to cool before serving.

Notes

  • Don’t overmix the batter to ensure a tender crumb and lighter muffins.
  • Soak bran flakes in milk for 10 minutes before mixing to achieve softer texture and better moisture distribution.
  • Use room temperature eggs to help ingredients blend evenly and improve muffin rise.
  • Adjust honey or sugar amounts based on taste and added mix-ins.
  • Check muffin doneness a few minutes before the timer ends as oven temperatures may vary.
