These Breakfast Quesadillas with Bacon & Avocado are a delicious way to start your day. Crispy bacon, creamy avocado, and scrambled eggs are stuffed into warm tortillas with melted cheddar cheese. It’s a savory and satisfying breakfast or brunch dish!

- 4 large flour tortillas
- 8 slices of bacon
- 1 avocado, sliced
- 1 cup shredded cheddar cheese
- 4 eggs
- Salt and pepper to taste
Instructions
- Cook bacon in a skillet over medium heat until crispy. Remove from skillet and drain on paper towels.
- In the same skillet, crack the eggs and scramble until fully cooked. Season with salt and pepper.
- Place a tortilla in the skillet and sprinkle with a quarter of the cheese. Add a quarter of the scrambled eggs, bacon, and avocado slices on one half of the tortilla.
- Fold the tortilla in half and cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is crispy.
- Repeat with the remaining ingredients to make 4 quesadillas.
- Serve hot and enjoy!
Notes
- You can substitute the cheddar cheese with any cheese of your choice, such as mozzarella or Monterey Jack.
- For extra flavor, try adding some salsa or hot sauce when serving.
