- 1 large sweet potato
- 2 eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions

Instructions
- Preheat the oven to 400°F.
- Wash the sweet potato and pierce it with a fork a few times.
- Place the sweet potato on a baking sheet and bake for 45-60 minutes, until soft.
- In a skillet, sauté the bell peppers and onions until softened.
- Once the sweet potato is cooked, cut it in half lengthwise and scoop out some of the flesh to make room for the filling.
