Roasted sweet potatoes are filled with a savory combination of sautéed bell peppers, onions, and a perfectly cooked egg. It’s a simple yet flavorful dish that can be customized with toppings like avocado, salsa, and cheese for added richness.


Ingredients

  • 1 large sweet potato
  • 2 eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Optional toppings: avocado, salsa, cheese

Instructions

  • Preheat the oven to 400°F.
  • Wash the sweet potato and pierce it with a fork a few times.
  • Place the sweet potato on a baking sheet and bake for 45-60 minutes, until soft.
  • In a skillet, sauté the bell peppers and onions until softened.
  • Once the sweet potato is cooked, cut it in half lengthwise and scoop out some of the flesh to make room for the filling.
  • Crack an egg into each sweet potato half and top with the sautéed peppers and onions.
  • Season with salt and pepper.
  • Bake for an additional 10-15 minutes, until the eggs are cooked to your liking.
  • Serve with your choice of toppings and enjoy!

Notes

  • You can add cheese on top of the egg for a melty finish.
  • If you prefer a runny egg yolk, check the eggs around the 10-minute mark to ensure they don’t overcook.
