- 1 Atlantic salmon fillet (skin removed)
- 1 tbsp pure olive oil
- 1 tbsp brown sugar
- 1 tbsp paprika
- 1 tbsp cayenne pepper
- 1 tbsp seasoning salt
- Pinch of black pepper
- Pinch of parsley
- 1 cup heavy whipping cream
- 1.5 shots white wine (Riesling or fruity wine)
- 2 tsp unsalted butter
- 2 tsp Gold N Soft butter (or 4 tsp butter of choice)
- 1 tsp regular Alfredo sauce
- 1 tbsp ground oregano
- 1 tbsp Old Bay seasoning
- 1 tsp brown sugar
- 1 tbsp parsley
- 2 tsp chicken broth
- 1 lb shrimp (cleaned and deveined)
- 1/2 cup Hennessy
- 1 stick butter
- 1 tbsp Cajun seasoning
- 2 tbsp brown Swerve (or brown sugar substitute)
- 1 tbsp minced garlic
- 1 tbsp red pepper flakes
- 1 tsp onion powder
- White pepper (to taste) or black pepper
- Parsley (for garnish)
Instructions
- Season the Salmon:
Lightly coat the salmon with olive oil. In a small bowl, mix the seasoning salt, cayenne pepper, paprika, Old Bay, and black pepper. Sprinkle the seasoning mix evenly on both sides of the salmon, ensuring it’s fully coated. - Cook the Salmon:
Preheat a cast-iron skillet or grill to medium heat. Cook the salmon for about 3-4 minutes per side, depending on the thickness of the fillet. For additional color and char, you can broil the salmon for 1 minute on one side (optional). - Prepare the Cajun Butter Sauce:
In a saucepan over medium heat, add the heavy whipping cream. Stir in the white wine and cook for 1 minute. Add the butter and let it melt completely. Stir in the chicken broth and Alfredo sauce until the mixture is creamy. Add the seasoning mixture (paprika, cayenne, oregano, Old Bay, brown sugar, and parsley) and stir until well combined. - Serve:
Drizzle the cooked salmon with the Cajun butter sauce and set aside. - Season the Shrimp:
Season the cleaned and deveined shrimp with white pepper, onion powder, and Cajun seasoning. Set aside. - Cook the Shrimp:
In a large pan over high heat, melt the butter. Add minced garlic and sauté until fragrant. Add the shrimp to the pan and cook on both sides until they turn pink, about 4-5 minutes. - Flambé with Hennessy:
Pour the Hennessy into the pan. The pan may begin to smoke as the alcohol burns off; this is normal. Continue to toss the shrimp in the Hennessy sauce until it thickens. - Finish and Garnish:
Add the brown Swerve (or brown sugar) and crushed red pepper flakes. Continue to toss and coat the shrimp in the sauce. Remove the shrimp from the pan and garnish with parsley. - Final Assembly:
Plate the salmon and shrimp together. Drizzle the remaining Cajun butter sauce over both the salmon and shrimp. Serve with your choice of pasta, vegetables, or enjoy as is!
