Instructions

  2. Cook the Sausage and Vegetables: Heat olive oil in a large skillet over medium heat. Add sliced andouille sausage and cook until browned and slightly crispy. Toss in diced onions, bell peppers, and minced garlic, sautéing until softened and fragrant.
  3. Sauté the Shrimp: Push the sausage and vegetables to the side of the pan. Add the shrimp seasoned with Cajun seasoning. Cook shrimp for 2-3 minutes on each side until pink and opaque. Stir everything together to combine flavors.
  4. Make the Sauce: Pour heavy cream into the pan, stirring to blend with the sausage juices and vegetables. Add extra Cajun seasoning if desired. Let the sauce simmer gently until it thickens slightly.
  5. Combine Pasta and Sauce: Add the cooked penne pasta to the skillet and toss to coat everything evenly. If the sauce feels too thick, stir in small amounts of reserved pasta water to loosen it to your preferred consistency.
