Description

These Cajun Stuffed Chicken Breasts are a flavorful, spicy dish that combines savory mushrooms, bell peppers, and melted pepper jack cheese, all tucked inside tender chicken breasts. Seasoned with bold Cajun spices and finished with a buttery finish, this dish is sure to impress.


Ingredients

  • 4 boneless skinless chicken breasts

  • 1 tablespoon olive oil

  • 4 medium white or cremini mushrooms, sliced

  • 1/2 medium red bell pepper, diced

  • 1/2 medium green bell pepper, diced

  • 1/4 medium white onion, diced

  • 1/2 cup shredded pepper jack cheese

  • 4 teaspoons Cajun seasoning

  • 4 tablespoons salted butter


Instructions

  • Prepare the Chicken Breasts:

    • Preheat your oven to 375°F (190°C).

    • Carefully cut a pocket into the center of each chicken breast, being careful not to cut all the way through. Set aside.

  • Cook the Filling:

    • Heat olive oil in a large skillet over medium heat. Add the mushrooms, red bell pepper, green bell pepper, and onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

    • Stir in 2 teaspoons of Cajun seasoning and cook for another minute until fragrant. Remove from heat and let it cool slightly.

    • Once the vegetables are cooled, stir in the shredded pepper jack cheese.

  • Stuff the Chicken:

    • Stuff each chicken breast with the vegetable and cheese mixture, then season the outside of the chicken breasts with the remaining 2 teaspoons of Cajun seasoning.

    • Secure the chicken breasts with toothpicks if needed to keep the stuffing in place.

  • Cook the Chicken:

    • In the same skillet, melt the salted butter over medium-high heat. Once the butter is melted, add the stuffed chicken breasts and cook for 3-4 minutes on each side, or until golden brown.

    • Transfer the skillet to the preheated oven and bake the chicken for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

 

  • Serve:

    • Remove the toothpicks from the chicken and serve immediately. Enjoy!

Notes

  • You can substitute the pepper jack cheese with any cheese you prefer, such as cheddar or mozzarella.

  • For extra spice, add more Cajun seasoning or a bit of hot sauce to the stuffing.
