Ingredients

4 boneless skinless chicken breasts

1 tablespoon olive oil

4 medium white or cremini mushrooms, sliced

1/2 medium red bell pepper, diced

1/2 medium green bell pepper, diced

1/4 medium white onion, diced

1/2 cup shredded pepper jack cheese

4 teaspoons Cajun seasoning

4 tablespoons salted butter
Instructions

Prepare the Chicken Breasts:

Preheat your oven to 375°F (190°C).

Carefully cut a pocket into the center of each chicken breast, being careful not to cut all the way through. Set aside.

Cook the Filling:

Heat olive oil in a large skillet over medium heat. Add the mushrooms, red bell pepper, green bell pepper, and onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Stir in 2 teaspoons of Cajun seasoning and cook for another minute until fragrant. Remove from heat and let it cool slightly.

Once the vegetables are cooled, stir in the shredded pepper jack cheese.

Stuff the Chicken:

Stuff each chicken breast with the vegetable and cheese mixture, then season the outside of the chicken breasts with the remaining 2 teaspoons of Cajun seasoning.

Secure the chicken breasts with toothpicks if needed to keep the stuffing in place.

Cook the Chicken:

In the same skillet, melt the salted butter over medium-high heat. Once the butter is melted, add the stuffed chicken breasts and cook for 3-4 minutes on each side, or until golden brown.

Transfer the skillet to the preheated oven and bake the chicken for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
