Description

These Caprese Stuffed Avocados are a fresh, flavorful, and light dish, perfect for a healthy appetizer or side. Filled with creamy mozzarella, juicy tomatoes, and fragrant basil, then drizzled with balsamic glaze, they make a refreshing addition to any meal.


Ingredients

  • 2 large ripe avocados (halved and pitted)
  • 1/2 cup fresh mozzarella balls (bocconcini or ciliegine, cut in half)
  • 1/2 cup cherry or grape tomatoes (halved)
  • 2 tbsp fresh basil leaves (chopped)
  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze (store-bought or homemade)
  • Salt and black pepper (to taste)
  • Optional toppings: Red chili flakes, garlic powder, or toasted pine nuts

Instructions

  • Prepare the Avocados:
    Cut the avocados in half and remove the pits. Gently scoop out a small amount of flesh from the center of each half to create space for the filling. (You can dice this extra avocado and add it to the filling.)
  • Make the Caprese Filling:
    In a mixing bowl, combine the mozzarella balls, halved tomatoes, chopped basil, olive oil, and a pinch of salt and pepper. Toss everything gently to combine.
  • Fill the Avocados:
    Spoon the Caprese mixture into the hollowed-out avocado halves. Be generous with the filling, letting it overflow slightly.
  • Drizzle & Garnish:
    Drizzle the balsamic glaze over the stuffed avocados. Add a sprinkle of red chili flakes, garlic powder, or toasted pine nuts for an extra flavor boost (optional).
