Ingredients

  • 10 cups popped popcorn (e.g., Skinny Pop or air-popped)

  • ½ cup unsalted butter, cut into pieces

  • 1 cup light brown sugar, packed

  • ¼ cup light corn syrup

  • ½ teaspoon baking soda

  • 1 teaspoon vanilla extract

  • Pinch of salt

Optional Mix-ins:

  • Chopped nuts

  • M&M’s

  • Candy corn

  • Sprinkles


Instructions

  • Place the popped popcorn in a large mixing bowl, removing any unpopped kernels.

  • In a saucepan over medium heat, melt the butter. Add brown sugar and corn syrup; stir constantly until it comes to a boil.

  • Once boiling, reduce heat slightly and simmer for 3–4 minutes without stirring.

  • Remove from heat and carefully stir in baking soda, vanilla extract, and a pinch of salt. The mixture will bubble.

  • Immediately pour caramel over the popcorn and use a spatula to toss and coat evenly.

  • Allow the mixture to cool slightly until safe to touch.

  • With greased hands, shape into balls (about tennis ball size).

  • Press in optional mix-ins while still warm if using.

  • Cool completely on parchment paper. Store in an airtight container.
