Description

These crispy, savory cauliflower fritters are packed with flavor from Parmesan cheese, fresh parsley, and garlic. They make a delicious side dish or snack that’s easy to prepare!


Ingredients

Scale
  • 1 head of cauliflower, cut into florets
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  • Steam the cauliflower florets until tender, then mash them with a potato masher.
  • In a large bowl, combine the mashed cauliflower, Parmesan cheese, parsley, garlic, eggs, salt, and pepper.
  • Heat olive oil in a skillet over medium heat.
  • Scoop the cauliflower mixture into the skillet to form fritters, flattening them with a spatula.
  • Cook the fritters for about 4-5 minutes on each side, or until golden brown.
  • Remove from the skillet and place on a paper towel to drain excess oil.
  • Serve hot and enjoy!

Notes

  • You can add a little flour if you want the fritters to hold together better.
  • These fritters are great with a side of sour cream or yogurt for dipping.
