- 1 head of cauliflower, cut into florets
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 2 large eggs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Steam the cauliflower florets until tender, then mash them with a potato masher.
- In a large bowl, combine the mashed cauliflower, Parmesan cheese, parsley, garlic, eggs, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Scoop the cauliflower mixture into the skillet to form fritters, flattening them with a spatula.
- Cook the fritters for about 4-5 minutes on each side, or until golden brown.
- Remove from the skillet and place on a paper towel to drain excess oil.
- Serve hot and enjoy!
Notes
- You can add a little flour if you want the fritters to hold together better.
- These fritters are great with a side of sour cream or yogurt for dipping.
