- 1 head of cauliflower
- 1 cup of sliced mushrooms
- 2 cups of fresh spinach
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- In a large skillet, heat the olive oil over medium heat and sauté the garlic until fragrant, about 1-2 minutes.
- Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they start to brown, about 4-5 minutes.
- Stir in the cauliflower rice and cook for an additional 5 minutes, allowing it to soften.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste.
