Ingredients

  • 1 head of cauliflower
  • 1 cup of sliced mushrooms
  • 2 cups of fresh spinach
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  • Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  • In a large skillet, heat the olive oil over medium heat and sauté the garlic until fragrant, about 1-2 minutes.
  • Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they start to brown, about 4-5 minutes.
  • Stir in the cauliflower rice and cook for an additional 5 minutes, allowing it to soften.
  • Add the fresh spinach and cook until wilted, about 2-3 minutes.
  • Season with salt and pepper to taste.
