This creamy and indulgent potato salad is packed with the savory flavors of crispy bacon, sharp cheddar cheese, and a tangy ranch dressing. A perfect side dish for any gathering or barbecue!


Ingredients

  • 2 pounds red potatoes (approx. 7 medium or 5 large potatoes)
  • 1 cup bacon, cooked and chopped
  • 1 cup cheddar cheese, shredded

For the Dressing:

  • 1 cup sour cream
  • ½ cup Greek yogurt
  • 1 packet ranch seasoning
  • 3 tablespoons chives, minced

Instructions

  • Prepare the Potatoes: Wash and cut the red potatoes into bite-sized pieces. Place them in a large pot and cover with water. Bring to a boil and cook until potatoes are fork-tender, about 10-15 minutes. Drain and let cool.
  • Make the Dressing: In a large mixing bowl, combine the cooked and chopped bacon, shredded cheddar cheese, sour cream, Greek yogurt, ranch seasoning, and chives. Mix well.
  • Combine: Add the cooled potatoes to the bowl and gently fold everything together until the potatoes are coated with the dressing.
  • Chill: Chill the potato salad in the refrigerator for at least 1 hour before serving. Enjoy!

Notes

  • For extra creaminess, use full-fat sour cream and Greek yogurt.
  • You can also add extra crispy bacon or even some green onions for added flavor.
