- 2 pounds red potatoes (approx. 7 medium or 5 large potatoes)
- 1 cup bacon, cooked and chopped
- 1 cup cheddar cheese, shredded
For the Dressing:
- 1 cup sour cream
- ½ cup Greek yogurt
- 1 packet ranch seasoning
- 3 tablespoons chives, minced
Instructions
- Prepare the Potatoes: Wash and cut the red potatoes into bite-sized pieces. Place them in a large pot and cover with water. Bring to a boil and cook until potatoes are fork-tender, about 10-15 minutes. Drain and let cool.
- Make the Dressing: In a large mixing bowl, combine the cooked and chopped bacon, shredded cheddar cheese, sour cream, Greek yogurt, ranch seasoning, and chives. Mix well.
- Combine: Add the cooled potatoes to the bowl and gently fold everything together until the potatoes are coated with the dressing.
- Chill: Chill the potato salad in the refrigerator for at least 1 hour before serving. Enjoy!
Notes
- For extra creaminess, use full-fat sour cream and Greek yogurt.
- You can also add extra crispy bacon or even some green onions for added flavor.
- This salad can be made a day ahead for the flavors to meld together even more.
