- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup beef broth
- 8 ounces pasta (such as penne or rotini)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1 cup frozen corn (optional)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish, optional)
- Sliced green onions (for garnish, optional)
Instructions
- Cook the Pasta:
Cook the pasta according to the package instructions until al dente. Drain and set aside. - Prepare the Beef Mixture:
In a large skillet or pot, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Add the chopped onion and minced garlic to the skillet and cook until the onion is softened. - Add Seasonings:
Stir in the taco seasoning and cook for another minute. - Add Tomatoes and Broth:
Pour in the diced tomatoes with green chilies and beef broth. Stir to combine and bring to a simmer. - Combine with Pasta:
