Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup beef broth
  • 8 ounces pasta (such as penne or rotini)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1 cup frozen corn (optional)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish, optional)
  • Sliced green onions (for garnish, optional)

Instructions

  • Cook the Pasta:
    Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Prepare the Beef Mixture:
    In a large skillet or pot, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Add the chopped onion and minced garlic to the skillet and cook until the onion is softened.
  • Add Seasonings:
    Stir in the taco seasoning and cook for another minute.
  • Add Tomatoes and Broth:
    Pour in the diced tomatoes with green chilies and beef broth. Stir to combine and bring to a simmer.
  • Combine with Pasta:
    Add the cooked pasta to the skillet and mix well. If using, stir in the frozen corn and cook until heated through.
  • Add Cheese and Sour Cream:
    Reduce the heat to low and stir in the shredded cheddar cheese, shredded mozzarella cheese, and sour cream. Cook until the cheese is melted and the mixture is creamy.
