  • 2 chicken breasts, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  • In a large skillet, cook the diced chicken over medium heat until no longer pink.
  • Add the chopped onion and minced garlic, cooking until fragrant, about 2-3 minutes.
  • Stir in the diced tomatoes, chicken broth, and rotini pasta. Bring to a simmer.
