7 oz (200g) cherry tomatoes, roughly chopped

1 handful of fresh spinach

2 tbsp tomato puree

1 tsp paprika

½ tsp cayenne pepper

1 tbsp olive oil

½ tsp chili flakes

Instructions

Heat olive oil in a large skillet over medium heat. Add the Italian sausage meat and cook until browned and fully cooked through, breaking it apart with a spatula as it cooks.

Once the sausage is cooked, add the garlic and sauté for another 1-2 minutes until fragrant.

Add the chopped cherry tomatoes to the skillet and cook until they soften, about 3-4 minutes.

Stir in the tomato puree, paprika, cayenne pepper, chili flakes, and black pepper. Cook for 2 more minutes, stirring to combine.
