Description

This hearty and comforting casserole combines savory ground beef, tender rice, and creamy mushroom soup, all topped with melty cheddar cheese. It’s an easy, one-dish meal that’s perfect for family dinners or weeknight meals.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 cup uncooked white rice
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 2 cups water
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned and cooked through. Drain any excess fat.
  • In a medium bowl, combine the cooked beef, uncooked rice, cream of mushroom soup, and water. Mix well to combine.
  • Pour the mixture into a greased 9×13 inch baking dish.
  • Cover the dish with foil and bake in the preheated oven for 30 minutes.
  • After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese over the casserole. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

  • You can substitute ground turkey or chicken for a leaner version.
  • If you prefer a spicier dish, you can add a pinch of red pepper flakes or a chopped jalapeño to the beef mixture.
  • This casserole can be made ahead and stored in the refrigerator for up to 3 days.
