Meat Option 1 (Taco Beef):

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 1 lb. ground beef

  • 1 package taco seasoning

  • ⅔ cup water

Meat Option 2 (Spicy Sausage):

  • 1 tablespoon olive oil

  • 1 lb. Hot Italian Sausage, removed from casings

Cheese Sauce:

  • ¼ cup unsalted butter

  • ¼ cup all-purpose flour

  • 2 cups whole milk

  • 4 cups shredded cheddar cheese

  • ½ teaspoon salt

  • ¼ teaspoon cayenne pepper (optional)

Toppings:

  • 1 red onion, diced

  • 1 jar jalapeños, drained

  • 12 tomatoes, diced

  • Sour cream, to taste

  • Green onions, diced


Instructions

  • Cook the fries according to package directions until golden and crispy.

  • Prepare the meat:

    • For beef: Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft. Stir in garlic, then add ground beef. Cook until browned. Add taco seasoning and water, simmer until thickened.

    • For sausage: Heat olive oil in a skillet, add sausage and cook until browned, breaking it apart with a spoon.

  • Make the cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Remove from heat and stir in shredded cheese, salt, and cayenne pepper (if using).

  • Assemble the dish: Spread cooked fries on a platter or baking sheet. Top with meat, pour over cheese sauce, and add toppings—diced red onion, jalapeños, tomatoes, sour cream, and green onions.

  • Serve immediately while hot and gooey.
