Description

Cheesy Meatloaf with Mashed Potatoes is a warm and hearty comfort food combining tender, flavorful meatloaf packed with melty cheese and creamy, buttery mashed potatoes. This classic dish balances savory, cheesy, and smooth textures, perfect for cozy weeknights or family gatherings, offering a satisfying and nutritious meal loved by both kids and adults.

Ingredients

Scale

For the Meatloaf

  • 1 lb ground beef
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup ketchup or BBQ sauce
  • Salt and pepper to taste

For the Mashed Potatoes

  • 2 lbs Yukon Gold or Russet potatoes
  • 4 tbsp butter
  • 1/2 cup milk or cream (warm)
  • Salt and pepper to taste

Instructions

  1. Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, breadcrumbs, shredded cheese, diced onions, minced garlic, egg, salt, and pepper. Mix gently yet thoroughly with your hands or a spatula until all ingredients are evenly distributed.
  2. Shape the Meatloaf: Transfer the mixture to a loaf pan or baking pan. Shape it neatly into a loaf and spread ketchup or BBQ sauce evenly over the top for a flavorful glaze.
  3. Bake the Meatloaf: Preheat the oven to 350°F (175°C). Bake the meatloaf for 50-60 minutes until the internal temperature reaches 160°F. The crust should be golden, and cheese inside nicely melted.
  4. Make the Mashed Potatoes: While the meatloaf bakes, peel and chop the potatoes. Boil them in salted water for 15-20 minutes until tender. Drain and mash with butter, warm milk or cream, salt, and pepper until smooth and creamy.
  5. Serve Together: Slice the meatloaf into thick portions and plate alongside generous scoops of creamy mashed potatoes. Garnish with fresh herbs if desired.

Notes

  • Use room temperature ingredients for better mixing and tender meatloaf.
  • Don’t overmix the meat to avoid a dense texture.
  • Let the meatloaf rest 10 minutes after baking to keep it juicy.
  • Yukon Gold potatoes provide a creamy texture needing less butter.
  • Stuff shredded cheese inside the loaf for melty cheese pockets.
