For the Meatloaf:
- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1/4 cup milk
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper, to taste
For the Cheese Filling:
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
For the Glaze:
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
Instructions
- Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, chopped onion, milk, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined. - Stuff the Meatloaf Bites:
Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line it with paper liners. Take small portions of the meatloaf mixture and flatten them in the palm of your hand. Place about 1 tablespoon of shredded mozzarella and cheddar cheese in the center of each portion, then fold the meat around the cheese to form a ball. Place each meatball into the muffin tin. - Prepare the Glaze:
In a small bowl, mix together the ketchup, brown sugar, and Worcestershire sauce. Spoon a small amount of the glaze over each meatloaf bite. - Bake the Meatloaf Bites:
Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the cheese is melted and bubbly. The internal temperature should reach 160°F (71°C). - Serve:
Allow the meatloaf bites to cool for a few minutes before serving. They are great as an appetizer, snack, or part of a main meal!
