Instructions

  1. Prepare the Adobo Marinade: In a bowl, combine soy sauce, vinegar, crushed garlic, bay leaves, peppercorns, and brown sugar. Whisk everything together until the sugar dissolves, creating a balanced salty, tangy, and sweet adobo marinade.
  2. Marinate the Chicken: Place chicken thighs or breasts in the marinade, ensuring they are fully coated. Let marinate for at least 30 minutes, or preferably overnight in the refrigerator for deeper flavor penetration.
  3. Cook the Chicken: Heat oil in a skillet over medium heat. Add the chicken pieces, reserving the marinade. Brown the chicken on both sides until golden and caramelized, about 3-4 minutes per side.
  4. Simmer in the Sauce: Pour the reserved marinade into the pan with the chicken. Reduce heat to low and cover. Let simmer for 15 to 20 minutes, turning occasionally, until chicken is cooked through and tender.
