- 12–15 lasagna noodles
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 10 oz fresh baby spinach
- 4 cups heavy cream
- 1.5 cups Parmesan cheese, freshly grated
- 15 oz ricotta cheese
- 1 teaspoon dried basil
- 3 cups cooked and shredded chicken
- 4 cups mozzarella cheese, grated
- Kosher salt and freshly ground black pepper, to taste
- Fresh parsley, minced (optional)
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Soak the Noodles: Soak the lasagna noodles in hot water for at least 30 minutes until softened.
- Cook the Vegetables: In a skillet, melt the butter over medium heat. Add the onion and cook until translucent. Add the minced garlic and cook for an additional 2 minutes.
- Prepare the Sauce: Stir in the spinach and cook until wilted. Then, add the heavy cream, dried basil, salt, and pepper. Simmer for a few minutes before stirring in the Parmesan, ricotta, and shredded chicken.
- Assemble the Lasagna: In the prepared baking dish, layer the soaked lasagna noodles, Alfredo mixture, and mozzarella cheese. Repeat the layers until all ingredients are used, finishing with mozzarella on top.
- Bake: Cover the dish with foil and bake for 45 minutes. If desired, broil for a few minutes to brown the cheese.
- Rest and Serve: Let the lasagna rest for 10 minutes before serving. Garnish with minced parsley if desired.
