- 2 cups cooked shredded chicken
- 1 avocado, diced
- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 1 cup shredded cheese
- 10 small flour tortillas
- 1 can green enchilada sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a large bowl, mix together the chicken, avocado, onion, bell pepper, 1/2 cup of cheese, garlic powder, cumin, salt, and pepper.
- Spoon the chicken mixture onto each tortilla, roll it up, and place it seam-side down in a baking dish.
- Pour the green enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
