These Chicken Avocado Enchiladas are a delicious and healthy twist on the classic enchilada. Filled with a savory mix of chicken, avocado, onion, and bell pepper, and topped with green enchilada sauce and melted cheese, they make a satisfying meal everyone will love.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 avocado, diced
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1 cup shredded cheese
  • 10 small flour tortillas
  • 1 can green enchilada sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F.
  • In a large bowl, mix together the chicken, avocado, onion, bell pepper, 1/2 cup of cheese, garlic powder, cumin, salt, and pepper.
  • Spoon the chicken mixture onto each tortilla, roll it up, and place it seam-side down in a baking dish.
  • Pour the green enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
