Ingredients
Scale
For the Stir Fry:
- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 3 cups broccoli florets
- 1 red bell pepper, sliced
- 1/2 cup sliced carrots
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
For the Sauce:
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce (optional)
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- 1 teaspoon sesame oil
To Serve:
- Cooked white rice or brown rice
- Sesame seeds (optional, for garnish)
- Sliced green onions (optional, for garnish)
Instructions
- Prepare the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken and cook for 5-6 minutes, stirring frequently, until the chicken is cooked through and slightly browned. Remove from the skillet and set aside. - Cook the Vegetables:
In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic, ginger, sliced bell pepper, carrots, and broccoli florets. Stir-fry for 4-5 minutes until the vegetables are tender-crisp. - Make the Sauce:
In a small bowl, whisk together soy sauce, oyster sauce (if using), hoisin sauce, rice vinegar, and sesame oil. Stir in the cornstarch mixture to thicken the sauce. - Combine Chicken and Sauce:
Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables, stirring well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce has thickened and everything is heated through. - Serve:
Serve the chicken and broccoli stir fry over cooked white or brown rice. Garnish with sesame seeds and sliced green onions if desired.
Notes
For a spicier kick, add a dash of red pepper flakes or sriracha to the sauce. You can also add other vegetables like snap peas or mushrooms for variety.
