  • 3 tablespoons butter

  • 1 tablespoon olive oil

  • 1 small yellow onion, diced

  • 12 ounces chicken breasts, diced

  • ½ teaspoon garlic powder

  • ½ teaspoon sweet paprika

  • ¼ teaspoon onion powder

  • 8 ounces sliced mushrooms

  • Salt, to taste

  • Fresh ground pepper, to taste

  • 3 cloves garlic, minced

  • 1¼ cups long grain white rice

  • 3 cups low-sodium chicken broth

  • Grated Parmesan, for garnish

  • Chopped fresh parsley, for garnish


Instructions

  • In a large skillet, heat the butter and olive oil over medium heat. Add the diced onion and cook for about 3 minutes until softened.

  • Add the diced chicken to the skillet and season with garlic powder, sweet paprika, onion powder, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken is browned and cooked through.

  • Add the sliced mushrooms and cook for an additional 3-4 minutes until they soften.

  • Stir in the minced garlic and cook for 1 minute until fragrant.

  • Add the rice to the skillet and stir to combine. Pour in the chicken broth, bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 18–20 minutes, or until the rice is cooked and the liquid has been absorbed.

  • Remove from heat and let the dish sit, covered, for 5 minutes to allow the rice to finish cooking.

  • Fluff the rice with a fork, then garnish with grated Parmesan and chopped fresh parsley.

  • Serve hot and enjoy!

Notes

  • You can use brown rice if you prefer, but the cooking time will need to be increased, and more liquid may be required.

  • For extra flavor, you can add a squeeze of lemon juice just before serving.
