- For the Meatloaf:
- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1 egg, beaten
- 4 slices ham
- 4 slices Swiss cheese
- For the Glaze:
- 1/2 cup Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a loaf pan.
- In a large bowl, combine the ground chicken, breadcrumbs, milk, Parmesan cheese, thyme, oregano, garlic powder, beaten egg, salt, and pepper. Mix until well combined.
- Press half of the chicken mixture into the bottom of the prepared loaf pan. Lay the slices of ham and Swiss cheese evenly over the top.
- Spread the remaining chicken mixture over the ham and cheese, pressing it down gently to seal the loaf.
- In a small bowl, mix together the Dijon mustard and honey. Brush the mixture over the top of the meatloaf.
- Drizzle olive oil over the top of the meatloaf.
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
- Let the meatloaf rest for 10 minutes before slicing and serving.
