Ingredients
For the steak:

1 pound pre-tenderized cube steaks or round steaks (about 4 steaks)

2 large eggs, beaten

1/2 cup milk

2 cups all-purpose flour

2 teaspoons kosher salt (for breading)

1 1/2 teaspoons garlic powder

1/2 teaspoon cayenne pepper

For the gravy:

3 tablespoons pan drippings

3 tablespoons all-purpose flour

1/4 cup heavy cream

1 3/4 cups milk (adjust to preference)

Freshly ground black pepper, to taste
Instructions

Season the cube steaks with kosher salt on both sides.

In a shallow bowl, whisk together the eggs and 1/2 cup milk.

In another shallow dish, combine the flour, 2 teaspoons kosher salt, garlic powder, and cayenne pepper.

Dip each steak first into the egg mixture, then dredge thoroughly in the seasoned flour, pressing the flour onto the steak to coat well.

Repeat the dip in egg and flour again for an extra crispy crust.

Heat about 1/2 inch of oil in a large skillet over medium-high heat until hot but not smoking.

Fry the steaks in batches until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

To make the gravy, leave about 3 tablespoons of pan drippings in the skillet. Whisk in 3 tablespoons of flour and cook over medium heat until golden brown and bubbly.

Gradually whisk in the heavy cream and milk, stirring constantly until the gravy thickens. Season with kosher salt and freshly ground black pepper to taste.
